FFwD: Corn Soup

Creamy soups are not my thing. I'm not gonna lie. Despite my feelings, I decided to try out this recipe anyway. I figured with the weather starting to change here in New England, why not make a nice soup for a lunch at home?

At least I tried. 

Alas, I did not like this soup very much. I am happy that I tried it out though - I adapted some smart tips that I'll use in future soup recipes. The fact that Dorie soaks the stripped corn cobs in the milk and lets it steep is pure genius. It really soaks up more of that "corny" flavor. Next time I'll try replicating that exact method in chicken broth perhaps. I love the idea of crunchy bites on top of the silky soup also. Bacon on anything steps a dish up a notch. I feel like this soup lacked something though - I just can't put my finger on it.

Your photos are beautiful! Glad you tried the soup. There were some great tips that can be used for other soups in the future.

I am glad that you at least tried it out :) as the saying goes..never try never know...sorry that you did not like it but I like your spirit ! :) Lovely try ! This is my first attempt too and I discovered that I managed to make it right. Thanks to Dorie !

The soaking the corn cobs in the milk was pretty genius - I would have never come up with that on my own. I like the thought of soaking the cobs in other stocks.

I agree, steeping the corn cobs in the liquid was brilliant. Sorry this wasn't your favorite, but it could have been. You just never know with new recipes. Good for you for trying it.

we enjoyed this, but we also used stock and light cream (which I think makes most soups better. ;-)

It's too bad you didn't enjoy the soup that much. The tip on steeping the corn cobs is worth it, though.
